Waterfowl are certain wildfowl of the order Anseriformes, especially members of the family Anatidae, which includes ducks, geese, and swans.

They are strong swimmers with medium to large bodies. They have historically been an important food source, and continue to be hunted as game, or raised as poultry for meat and eggs. The domestic duck is sometimes kept as a pet.

Some definitions of the term 'waterfowl' include the saltwater shorebirds or waders, gulls, pelicans, and herons, as well as seabirds such as the albatross, but 'fowl' especially refers to birds used by humans for game,


Mallard Duck
(Anas platyrhynchos)

The Mallard is a dabbling duck which breeds throughout the temperate and subtropical regions of the Americas, Europe, Asia and North Africa and has been introduced to New Zealand and Australia.  The mallard lives in wetlands, eats water plants and is gregarious.  The mallard is also a migratory bird.  The mallard is the most popular sought duck in sport.  The mallard is known to interbreed with over 60 species of ducks.  The male mallard has a green head with colorful wing plumage while the hen is light brown in color.

Wood Duck
(Aix sponsa)

The Wood Duck is a a perching duck about 3/4 the size of a mallard.  The wood duck is native to eastern North America, the west coast of the United States and western Mexico and inhabits wooded swamps, shallow lakes, marshes and ponds.  The male is described by having a distinctive multicolored iridescent plumage with red eyes with a distinctive white flare down the neck.  The female is less colorful, have a white eye ring and a whitish throat.  Both adults have a crested head.

Mandarin Duck
(Aix galericulata)

The mandarin duck is a medium sized perching duck native to Asia inhabiting dense wooded areas near shallow lakes, marshes and ponds.  The male has a large white crescent above the eye with a reddish face.  The female is simlar to the female Wood Duck, with a white eye-ring and white stripe running back from the eye, but paler below, has small white flank stripe with a pale tip on its bill.  Tis bird is not considered a game bird.

Ringed Teal Duck
(Callonetta leucophrys)

The Ringed Teal is a small dabbling duck of South American forest, breeding in tropical swampy forest and marshy clearings in well wooded low lands as well as secluded pools and streams.  The male is described as a rich chestnut back, pale gray flanks and a salmon-coulored breast speckled in black.  A black band runs from the top of its head to the nape of its neck.  The female has an olive  brownish back with the head blotched and stiated in white, with pencilled barring on a pale chest and belly.

Muscovy Ducks
(Cairina moschata)

The Muscovy Duck is a large duck which is native to Mexico and Central and South America. A small wild population reaches into the United States in the lower Rio Grande Valley of Texas. There also are feral breeding populations in North America in and around public parks in nearly every state of the USA and in the Canadian provinces; feral populations also exist in Europe. Although the Muscovy Duck is a tropical bird, it adapts to icy and snowy conditions down to –12°C (10°F) and below without ill effects.[2][3] In general, "Barbary Duck" is the usual term for C. moschata in a culinary context.
